Fish fillets in kalamansi and pineapple sauce

We brought this to last Saturday’s pot luck dinner with our friends. One of them had told me earlier in the day that she was preparing pork spare ribs and I thought that another meat dish would be too heavy. Hence, I decided on a seafood dish. I used maya-maya but I suppose any fleshy [...]

Cheese-topped beef and eggplants

When I refer to eggplants, I am referring to the common oriental eggplant that is six to ten inches long and a deep purple in color. Do they taste any different from the shorter but rounder variety? I really don’t know. I have never tried cooking the short round ones since they are not very [...]

Tuna spread

Before we were married, my then boyfriend, now husband, and I used to go to Tagaytay City on picnics. We would bring food to last us the whole day and a bottle of wine. Roast whole chicken and a special chicken sandwich filling were among his favorites. Those days, according to him, started ruining his [...]

Nilasing na baboy (drunken pork)

Basically a pot roast, this pork dish is served with a sauce that is an improvement of the one I used for my drunken chicken. I’m trying to use up the bottles of alcohol in the kitchen cabinets; there will be more by December. Filipino clients/corporations love giving away bottles of alcoholic drinks for Christmas.

Buko, rambutan and jelly in cream

This dessert is a variation of the popular buko-lychee dessert often served in restaurants and which is also a favorite in catered buffets. I ditched the lychees and used rambutan instead, rambutan being native to the Philippines. I just discovered that they are now available canned, imported from China though.
This was last Sunday’s dessert. [...]

Yellow fin tuna fillets and mushrooms stir fry

My husband and I went on a food shopping spree yesterday. First stop was the supermarket. We bought canned, bottled and dry food supplies that will last for a month. Yeah, gasoline is so expensive that we’re cutting down on the supermarket trips. Instead of doing it every two weeks, we’re trying to find out [...]

Drunken chicken

You will find a recipe for “drunken chicken” in many Chinese cookbooks. But you will not find this recipe for drunken chicken in any cookbook. In fact, you won’t find it anywhere. I just invented this recipe. Tonight. Out of sheer desperation. I was planning on having chicken asado when I discovered that we had [...]

Steamed whole fish in olive oil

Simple and easy. Geez, it was good! From the aroma that first permeated the kitchen and then the dining room… but the best things were the short cooking time (40 minutes including preparation), the readily available ingredients (these are staples in most pantries), the fancy-free procedure and my family’s appreciation.
My kids and I were [...]
