baked fish and spinachThis is one of the easiest dishes I have cooked in my entire life. The inspiration came from an Italian baked fish and vegetables dish that I saw on Avventura on the Discovery Travel and Living Channel. The traditional Italian dish, cooked by the owner of a restaurant in the Italian countryside, had more varieties of vegetables in it. And, he used a whole fish, not filleted liked the one I used. Cucumber cooler

cucumber cooler: pureed cucumbers, water, ice and sugarI first tried cucumber juice at Alfredo’s Steak House along Tomas Morato in Quezon City. My friend Lisa, whose family owns the place, recommended it. At first, I was a bit hesitant. Cucumber juice? I mean, I’ve tried carrot juice and hated it. Vegetables always seemed better eaten than drank. I’m glad I tried it though. After the first few sips, I was hooked. After that, my brother and I made cucumber drinks at home using the blender.
