Ostrich tapa fried rice

When I cooked the ostrich tapa a few days ago, I actually cooked 500 grams of ostrich meat which turned out to be too much for a meal for four. There were leftovers–not much but enough for a Chinese style fried rice the following day. I threw in some leftover barbequed roast pork and there was enough meat in the fried rice dish to dispense with the need to cook a new main dish. That’s really one reason why I love Chinese style fried rice. If you don’t scrimp on the meat (or seafood) and vegetables, it can be a complete meal by itself.

Ostrich meat, tapa style

…While it is easy enough to find good quality tocino, finding good tapa can be a problem. We have had many unfortunate experiences of buying tapa which, after cooking, turned out to be tough as rubber.
When I discovered ostrich meat a couple of years ago and started using it for stir fries like ostrich chop suey, I realized that the fatless, tender meat would be ideal for making tapa.

Chicken and potatoes in lemon-cream sauce

I cooked this chicken dish a couple of weeks ago. I had no intention of posting the recipe because I was saving it for the cookbook that I am writing. Oh, there, I announced it already. Anyway, the cookbook will contain unpublished recipes. My original plan was to include only original recipes, meaning, ones that I “invented”, in panic mode or otherwise. But I decided to stick with an all-Filipino theme. That said, this recipe will not be included in the cookbook since it’s hardly Filipino…

I was first introduced to chicken-asparagus soup in a Chinese restaurant in Caloocan City called Boy Ching Woo. Ten years ago, it was the only Chinese restaurant with decent food on the street where we lived. But since most of its customers were beer drinkers who enjoyed the Chinese dishes as pulutan, very rarely did we dine there. Most of the time, we ordered “to go”.
