Fish fillets in white wine and cream-and-cheese sauce

fish fillets in white wine and cream sauceThis dish was made from leftovers. I had some excess cream-and-cheese sauce from the two trays of baked macaroni that I cooked for my daughter Sam’s best friend’s birthday party and for their class Christmas party last weekend. I kept the sauce in an airtight container in the fridge. I had forgotten all about it had Sam not rummaged through the contents of the fridge last night.

The fish, on the other hand, was the third of three fish fillets that my husband bought recently. I used two to cook fish fillets with sweet and sour sauce for last night’s dinner. The third fillet was today’s lunch — this fish fillet with white wine and cream sauce.

Cocido-inspired beef stew

cocido: a meat stewI was reading up on cocido and I found out that the traditional Spanish cocido is what we know in the Philippines as pochero. At least, it is the closest beef stew to the Spanish cocidogarbanzos (chick peas), cabbage wedges, potatoes, carrots and beef slow cooked in chopped onions, tomatoes and garlic. But we serve and eat pochero as a one-dish meal. The Spanish cocido is served both as a soup and an entree. The thick broth in which the meat and vegetables have been cooked is served as a soup while the meat is served on a platter surrounded by the cooked vegetables. That’s too much work for a busy mother like me. Suffice it to say that while this dish was inspired by the Spanish cocido, I will call it simply as cocido-inspired beef stew.

Baked chicken in sour cream

baked chicken in sour creamEntertaining at home need not be a daunting task. The trick is to divide the cooking over several days as much as possible. And it is never a good idea to cook too much. Making allowances for second helpings is a good rule but anything beyond that would be excessive.

Jay and Jet David were my lunch guests today and I cooked two simple-to-prepare dishes for them. One is this baked chicken in sour cream which was ready in one hour flat. The other dish, my version of Spanish cocido, was cooked in segments. The beef was boiled yesterday and cooked as a stew this morning. Presto! — instant reunion over lunch.

One is from my daughter’s best friend who is celebrating her birthday today (the party will be tomorrow though). The other is from Sam’s classmates who have voted to include my baked macaroni in the class party’s menu. You might want to read the original entry for better context.

Phynkee posted a comment about having made the baked macaroni twice (her two daughter’s birthday parties, respectively) and that she would be making it again for their Pinoy Christmas party in Shanghai. Well, she e-mailed me some photos from her daughter’s birthday party and… I really feel like Christmas, you know?

Lasang Pinoy 16: Chocolate Polvoron

dark chocolate and white chocolate polvoronIt was during a trip to Los Baños, Laguna last year when we first sampled chocolate coated polvoron. I bought a pack, just to try, and handed the package to the kids in the backseat. We made another stop to check out some potted herbs. Because it was drizzling, we left the kids in the car with instructions to lock the doors. I went ahead and inspected the potted herbs. After a few minutes, my husband went back to the car to check up on the kids. He came back for me with the news that the kids couldn’t talk — their mouths were full and with every word spoken out came the powdery milk of the polvoron. In short, they liked it. Too bad that we couldn’t find chocolate coated polvoron in our area, not even in Metro Manila. Until last night…
