Adjustable roasting rack



Last December, I was obliged to buy a roasting pan after the mess I created with my roast duckling. Unfortunately, the roasting pan was not that durable. After a few months, it rusted. Since there will be a lot of roasting over the Christmas season, we went hunting for a new — and better — roasting pan. The hunt brought us back to Living Well at the Mall of Asia where Speedy bought the lovely wooden pepper mills last summer. The one I wanted, a sturdy looking stainless steel set, was the one I couldn’t afford. At P12,000.00 (a little less than US$300.00), I had to turn my back on it.

We were about to leave the store when Speedy decided to check out the items on sale out front and he discovered this adjustable roasting rack. Buy one, take one for P199.00. What a bargain. It’s not heirloom material, I’m pretty sure of that. It’s cheap, made in Taiwan, but it’ll serve its purpose. Besides, I have two. When one goes out of commission, I’ll start using the second one.

Above is a closer look at the grooves. Depending on the size of the meat or bird you’re roasting, simply adjust the stand to the proper grooves for the best fit.

The base of the rack fits snugly in my largest Anchor Hocking pan so I don’t have to buy a separate roasting tin. I used the rack for the first time last night and cleaning was a breeze. Cleaning the rack, that is. Actually, the pork was undercooked and I had to cut it into one-inch thick slices which I recooked individually in a non-stick pan for a minute or so on each side. The additional work and utensils resulted in unexpected mess, but hey, the rack itself was still great. :)

    Your new roasting rack looks good to me, Connie. I wouldn’t spend $300.00 on one either. Happy roasting!!!

    I would just like to ask if the adjustable roasting rack will fit a 9×9 pan? I’m thinking din kasi of buying one kaya lang baka di magkasya. Thanks!

    Connie, one of the best kitchen investments I’ve made is on a digital meat thermometer. I’ve owned many variations that either melted in the oven or got lost in dishwasher heaven. The last one I bought (and it’s a keeper!) attaches to the exterior oven door with a magnet. I set the alarm to desired cooking temperature, attach the probe via a thin, heat-proof wire into the roast meat, and close the oven. When the meat reaches the desired temperature, an alarm rings to notify me. Unlike with stick thermometers, I don’t have to open the oven door to check the temp, thus, releasing heat out of the oven. It has made my roasted racks of prime rib and turkeys famous during the holidays. I got mine at a kitchen store for about US$20.00 and it’s a Pyrex brand, but I’m sure there are other brands like it.

    Now, this adjustable roasting rack you found is a great deal! Two for one! I’ll have to look for one (or two) here.

    I have the same one like it =) I’ve had it for years. I think I have to buy a new one soon cos its starting to rust =(

    That really looks like a handy piece of cooking equipment and at P199 for two! A real bargain. I seem to recall seeing similar contraptions in divisoria a couple of years back.

    i have the same but mine’s coated with something that prevents it from rusting.. it was just a gift from my sister in the US coz i told her that i usually use my rotisserie when roasting chicken and it usually eats up a big part of my meralco bills! hahaha!! she decided to look for a roasting rack like the one she uses and told me to just bake my chicken which is more economical than using my oven’s rotisserie.. and i can save the drippings for a hearty gravy!! it is really great from baking meats and chicken no?

    kaye, I haven’t used it for roasting chicken but that’s my next project. Ambitious project, actually — chicken relleno hehehehe

    can’t wait sana magawa nyo sya and post it before the christmas season sigurado masarap yun. and good dish for the holiday nag iisip po kasi ng bagong recipe ng mother ko extra especial for noche buena sigurado bibili rin ako ng rack.
