They are inexorably associated with misa de gallo , the dawn mass on the nine days before Christmas. Sie sind unaufhaltsam im Zusammenhang mit misa de Gallo, der Morgendämmerung Masse auf die neun Tage vor Weihnachten. While they are more common as street food, they are so popular (even among tourists) that even five-star hotels serve them–using the traditional cookware–during the holiday season. Bibingka , above, is a rice cake similar to the Western pancake in appearance. Bibingka oben, ist ein Reiskuchen ähnlich wie die westlichen Pfannkuchen in Erscheinung. In taste, texture and way of cooking, however, they are very much different from each other. Bibingka is made from galapong , baked in a special clay pot, lined with a piece of banana leaf, with live coals on top and underneath. Im Geschmack, Textur und die Art der Küche, aber sie sind sehr stark voneinander unterscheiden. Bibingka ist aus galapong, gebacken in einem speziellen Ton-Topf, mit einem Stück Banane Blatt, mit Live-Kohlen in Ober-und Unterseite. It is topped with slices of kesong puti (white cheese) and itlog na maalat (salted duck eggs). Es ist gekrönt mit Scheiben kesong weißes (weißer Käse) und itlog na maalat (gesalzen Ente Eier). The newly-cooked bibingka is spread with butter and sometimes sprinkled with sugar then served with niyog (grated coconut). Galapong is glutinous rice soaked in water then ground with the water to form either a batter or a dough, depending on what the cooked dish is supposed to be. Die neu gekocht bibingka erstreckt sich mit Butter und manchmal mit Zucker streute anschließend serviert mit niyog (gerieben Kokosnuss). Galapong ist glutenhaltigen Reis in Wasser getränkten Boden dann mit dem Wasser zu bilden entweder einen Teig oder ein Teig, je nachdem, was das Gericht gekocht soll sein.
Puto bumbong is a dish made from purpled-colored ground rice cooked in bamboo tubes that are placed on a special steamer-cooker. Puto bumbong ist ein Gericht aus purpled farbigen Boden-Reis gekocht in Bambus-Röhren, die sich über eine besondere Dampfer-Herd. Then, they are removed from the bamboo tubes, spread with butter and sprinkled with sugar and niyog (grated coconut). Dann sind sie aus dem Bambus-Röhren, die sich mit Butter und mit Zucker und niyog (gerieben Kokosnuss). They are then wrapped in wilted banana leaves which will keep them warm and moist until ready to be eaten. The bamboo tubes are half filled with the purple-colored rice in the huge bowl (right side of the photo). The bamboo tubes are usually wrapped in cloth to avoid burning the hands of the vendor when they are removed from the steamer when the puto bumbong is ready. Der Bambus-Rohre sind in der Regel in Tuch eingewickelt zu vermeiden Brennen den Händen des Verkäufers, wenn sie aus dem Dampfer, wenn die glauben, daß bumbong ist fertig. You know, i have improvised a puto bumbong steamer out of my old B/D handy steamer today. Sie wissen, ich habe improvisiert bumbong glauben, daß ein Dampfer aus meinem alten B / D handliche Dampfer heute. It took me a whole day to make one including also 3 improvised bumbong . I brought a puto bumbong steamer from RP and it showed wierd when they x-rayed my bag. Ich brachte eine puto bumbong Dampfer von RP und es zeigte seltsam, wenn sie röntgen meine Tasche. So I had to open my luggage. Also musste ich mein Gepäck öffnen. customs probably thought it was explosives. Zoll wahrscheinlich dachte, es sei Sprengstoff. Anyway, i am able to use the steamer here in the US I use a combination of mochiko and ground black rice (pirurutong) that I buy from oriental stores. Wie dem auch sei, ich kann die Verwendung der Dampfer hier in den USA Ich verwende eine Kombination von Boden und mochiko schwarzen Reis (pirurutong), kaufe ich von orientalischen Geschäften.
Though I have not perfected my recipe yet. Obwohl ich noch nicht perfektioniert mein Rezept noch nicht.

There is no secret recipes in making puto bumbong or bibingka, putong puti… what makes them very delicious… well it comes from special rice… like denorado rice or jasmine rice… Just follow the basic procedure of Galapong Rice Cake then use the denorado or jasmine rice… never use flour rice ( does not taste good).
