Buffalo chicken wings

There are quite a few versions about how the dish originated. Personally, I never heard of buffalo chicken wings until there was Don Henrico’s.

Buffalo chicken wingsDeep-fried or grilled, buffalo chicken wings are spicy — coated with a hot sauce. Some purists claim that real buffalo chicken wings are never breaded. I don’t care what they say — the breading catches more sauce and makes the chicken tastier. A lot of buffalo chicken wings recipes that you will find online simply tell you to coat the chicken with bottled sauce. I really do not like that idea because it’s like saying that you can’t make good chicken buffalo wings without relying heavily on bottled hot sauce.

I always start with well seasoned chicken wings that have been allowed to marinate in the fridge for at least two hours. With larger pieces of chicken, like thighs and legs, I prefer a longer marinating time, but with chicken wings, two hours are quite sufficient. Then, I cook the chicken wings Southern style after which I coat them with my special hot barbecue sauce.

To make buffalo chicken wings, you will first need to cook southern-style fried chicken wings. While the chicken marinates, prepare the hot barbecue sauce.

This barbecue sauce recipe is good for 10 medium-sized chicken wings.

Ingredients for hot barbecue sauce

1/4 c. of butter, melted then cooled to room temperature
juice of 1 lemon (much more aromatic than vinegar)
1 tsp. of finely grated ginger (or powdered ginger)
1 tbsp. of finely grated garlic (or powdered garlic)
1 small onion, finely chopped (or powdered onion)
1 tsp. of salt
2 to 4 red chili peppers, depending on how hot you like it, finely chopped (or use chili flakes or cayenne powder)
1 tbsp. of Dijon mustard
1/3 c. of honey
about 6 tbsps. of dark liquid seasoning (Kikkoman, Knorr or Bragg, or you can use steak sauce)

Note that you can use more, or less, of any of the ingredients to suit your taste. Personally, I like my buffalo chicken wings rather sweet and mildly spicy.

Put all the ingredients in a jar with a screw type cap. Cover the jar and shake until everything is well blended. Let sit to allow the flavors to develop while the chicken marinates.

Now cook your southern-style fried chicken wings.

When the fried chicken is done, strain the marinade into a frying pan, pressing the spices against the strainer to squeeze out all the juices. Heat to boiling point then add the cooked chicken wings, stirring and working fast to coat the chicken wings evenly. Remember that the sauce is sticky because of the honey so you really need to work fast. Cook for a minute or so over medium heat, or just until the sauce has been absorbed. Turn off the heat and serve the chicken wings at once.

Buffalo chicken wings are traditionally served with blue cheese sauce on the side. You may choose not to, or you may opt for sour cream and garlic sauce. Your choice, really. I’m content to eat my buffalo chicken wings with buttered pearl potatoes and steamed vegetables.

    When the Don Henrico’s in shaw blvd. (which my pigging-out buddy and I used to frequent) closed, nalungkot talaga ako mainly bec. of their buffalo wings.

    I’ll make this for the hubby’s pulutan, sigurado bida na naman ang misis nito sa mga drinking buddies niya, hehe.

    Hi Ms. Connie..i’ve been lurking to your site for months now..and even tried some of your recipe..and like everybody here it was a “two-thumbs up” thanks to your unconventional style of cooking and sharing it for free.

    Chicken wings is a family favorite, pero kind of boring na rin kasi isa lang ang alam kong style of marinating and cooking it. This time may idea na ako. I’ll try this one and let you know the outcome.

    Hmmmmm, lots of spices for this tiny thingy, hehehe. I have to get these spices and try this one, back for my cholesterol but sure looks great and yummy, thanks! Actually I seem to have everything except the mustard, would that do (without the mustard?)

    for a lazy one like me,buffalo chicken wings
    is cooking it in the stove with little water,Sweet
    Baby Ray’s barbecue sauce and thai chili sauce.
    when cooked placed it in the oven to brown…..
    yummy. add more sauce if desired.

    this was ok. Ang dami kong nilagay na red pepper flakes pero di umanghang. I used knorr liquid seasoning pero dapat ata basic toyo na lang para mas mag-blend with the other ingredients.Didn’t taste like don hen though :( Pero ok lang. Pwede na. Oks yung southern chicken recipe. Corn meal sticks more than flour. I used a fry daddy and just let the wings to cook for 8 minutes.

    try ko siya, nakakatakam,pwede din siguro sa thigh part no? kasi allergic sa skin ung anak ko,di maiiwasang kainin pag ganyang mukhang kasarap…since out of the country ako,nagcha-chat kami ng anak ko,binigay ko recipe nung sothern-style recipe, mahilig kasi sila sa fried chicken, e ung ginagami naming procedure,ung flour-egg-breadcrumbs syle pa, ito di mabusisi,mga boys pa naman naiwan sa bahay namin,hehehe

    My favorite, Connie. Each time we cross the border to Niagara Falls or Buffalo, NY, I never forget to buy 30-50 pcs of these chicken wings to bring back home. The secret is in the sauce and they’re great with blue cheese dip.
