Comfort food and home cooked meals

sweets and desserts… home cooking is going to make a big comeback as people will eat out less often to save money. Fancy and gourmet ingredients and food items will take a back seat as the wise home cooks go back to the basics — less processed and more fresh meat and seafood, more vegetables and fruits, and hearty soups and desserts that can be made at home. Recycling leftovers is likely to be elevated to art form as home cooks rise up to the challenge of being less wasteful yet more creative and inventive. What can I say? The financial scares make some mope and gripe but for others it is an opportunity to reassess spending priorities and eating habits.

Mango custard

mango custardThis is my second attempt at making mango custard. The first one, a couple of months ago, was a total disaster and it took me a long time to muster the guts to try again. Yes, the first attempt was that bad. Traumatic. Terribly traumatic. It’s the kind of failure that makes me ask myself if I can really cook at all.

Peaches and cream

peaches and creamUnlike the older mango royale recipe, I have found a way to make the cream filling firm without freezing. My husband prefers this dessert frozen but it loses its light and airy texture and instead acquires the texture of ice cream with ice crystals which I really do not enjoy. I prefer the cream filling to be custard-like, similar to the cream-cheese filling of tiramisu. The trick? Well-chilled cream and sweetened condensed milk.

midnight snack: crepes, bananas and guava jellyWe were watching some DVDs last night and, close to midnight, we found ourselves hungry only to discover there was no bread in the house to make some quick sandwiches. There were boxes of cereals and lots of milk but cereals just don’t seem right for a midnight snack. My daughter, Alex, wanted some crepes but there was no pancake mix either. Alas, with heavy feet (we were in the middle of a very funny movie), I dragged myself into the kitchen to make some crepes from scratch.
