Chicken and asparagus fried rice

If it were at all possible, I’d rather that my kids buy their lunch from the school canteen. Honestly. Waking up early in the morning is a killer for me. I am just not a morning person. Most mornings I just want to loll in bed and not get up until I’m ready to get up especially during the past few weeks when it rains most of the time and the fog is thick in the mornings. But, yeah, there’s the big but, by letting them take packed lunches to school, I know exactly what they eat and how much. I’m sure that’s more important than lolling in bed until mid-morning.

This fried rice dish includes all the basic food groups and even Jamie Oliver can’t complain.
Best part is how easy it is to prepare this chicken and asparagus fried rice.
You know, if the photos weren’t auto organized neatly into folders when I download them from the camera, I wouldn’t be able to tell you when my kids had this for lunch. According to the date on the virtual folder, it was July 28th.

i wish im good in making fried rice. mine always end up looking like kakanin, you know very sticky and all.
paupau, if you intend to make fried rice from leftover rice, when you cook the rice (the original cooking) use less water than usual. Pag malata yung saing, it doesn’t make for good fried rice.

Hi! This looks like a delicious recipe. I love fried rice, too. I read somewhere that refrigerating the rice before cooking will prevent the grains from sticking together, if you’re using left-over rice.

Yes, Lani, cold cooked rice is best. But if the sinaing is malata to start with, refrigeration won’t help.

I cook fried rice from time to time as this is the most easy meal to make. I guess I must have used a bit too much soy sauce so normally it turned out quite dark. Maybe I should try not to use any soy sauce and hope that it will turn out like yours.
As you may know, the other easy meal you could make for your kids would be chow mein. I made some recently: http://www.windyscorner.info. I’m also not a morning person but I believe that it is worthed to get up early to make something nice for your kids. Keep up the good work!

My fried rice slim version is lamig na kanin, garlic, onions, a pinch of salt, black pepper powder and curry powder. Minsan nilalagyan ko ng oregano which I grew and dried myself.
My children who are all adults tell me its yummy.
But I am sure I would try your recipe too, kasi alam ko masarap sya. Kaya lang bawal yata saken asparagus. He!he!

malou, you might want to try my garlic, basil and onion leaves fried rice.
tungkol dun sa fried rice, para hindi sila dumikit, wag nyong gamitin yung “sticky rice” katulad nung milagrosa. mga gamit ng chinese sa restaurants yung isang klase na hiwahiwalay ang butil ng kanin. ganun kasi gamit ko eh.

I loved it. A just made some alteration. Like, I steamed the asparagus 1st .. ang sarap kasi parang juice siya sa loob tapos crunchy sa labas. I used left over chicken joy in the ref.
Grabe sobrang natuwa kami ng asawa ko. We tasted it before packing it as lunch. After tasting sabi ng husbad ko. Siksikin mo baon ko ..
