Chicken and mushrooms burger

If you’ve been to Tagaytay City, you must have passed by Mushroom Burger along Aguinaldo Highway. And if you’re a Tagaytay habitue like I am, you must have eaten at the place more than once. If you’re a real Mushroom Burger fan, you would probably know that there used to be a branch at the Makati Commercial Center and that there is still a branch in Quezon City. And if you’re the kind of person who is curious about what exactly goes into a Mushroom Burger, you’d probably have read up or asked around and discovered that it is one part ground beef and one part ground oyster mushrooms.

Chicken and mushrooms burger

As I mentioned a few entries ago, we are trying to drastically cut our red meat consumption. We are succeeding, so far, but coming up with new chicken and fish dishes has been a tremendous challenge. Here is something we had recently — chicken and mushroom burgers. I kept the size small so they’d fit inside a split pan de sal.

Makes 15 mini-burgers.

Ingredients for chicken and mushrooms burger

500 g. of ground chicken breast meat
200 g. of oyster mushrooms
half a head of garlic, peeled and finely minced
1 large onion, peeled and finely chopped
1/4 c. of bread crumbs
1 egg, beaten
1-1/2 tsp. of salt
1 tsp. of ground pepper
1 tbsp. of Kecap Manis (Indonesian sweet soy sauce)
1 tbsp. of vegetable oil

Line a shallow baking dish with non-stick baking paper. Pre-heat the oven to 175oC.

Mix all the ingredients together. Form into patties and arrange on the lined baking sheet. Cook in the oven for 10 to 15 minutes.

That’s about it. I know it sounds so impossibly simple so I’ll answer the obvious questions.

Why oyster mushrooms?

Oyster mushrooms have a very delicate flavor that will not compete with the natural flavor of the meat. I suspect that is why the owner of Mushroom Burger chose oyster mushrooms.

Can the burgers be fried or grilled?

If you were using ground beef instead of ground chicken, yes, it’s possible. But the ground chicken and mushrooms mixture is not easy to form and the patties are really soft rather than firm. I doubt if they can withstand handling and turning on a grill or a frying pan.

Is Kecap Manis really essential?

No, but you’ll miss out a lot on flavor if you omit it.

Chicken and mushrooms burger with garlic fried rice

Are the chicken and mushrooms burgers good with rice too?

Make that garlic fried rice, throw in a fried egg, sunny side up, serve the chicken and mushrooms burgers with them then you tell me if they’re great with rice. :)

This is a healthy way of making burgers, mas low in calorie, i’m cutting my husbands red meat intake too so i’ll definitely try this recipe. I haven’t tried chicken burger yet. Thanks….

  2. Connie on April 23rd, 2008 11:33 am

Hi Loida. It’s lighter on the digestive system too. Red meat can be so heavy during the summer months.

    Hi Ms. Connie,
I would love to have this recipe with rice or mashed potato - and gravy!
I tried the instant gravy mix sold in supermarket (i wont mention the brand) but it tasted just so fake.

Please share naman a recipe for any suitable gravy. Thanks loads!

    Connie:
Sorry about your data loss of cookbook recipes!
You must invest in a hard drive to copy your work that costs around $80.00 holding 100GB. it has the size and thinness of a wallet. Once the data is copied, then you never have to worry. Ah well, I’ll
still wait for your cookbook though.

  8. Connie on April 24th, 2008 1:30 am

I know, Les. It’s a 120GB hard drive. I thought it was just a switch problem, but… I have the text in the Mac but the photos in their original format are in the external drive.

Hi, Miss Connie! Tanong lang po how you incorporate the mushroom… chopped lang tapos halo? Or kasama sya pinagiling kasama ng chicken breast po? I would really like to try this for my nieces who aren’t fond of red meat. Thanks!

  13. Doddie from Korea on April 24th, 2008 6:46 pm

    Connie,

I’ve got a bag of oyster mushrooms in the fridge, I’m gonna try this tomorrow. Can I link this page to my blog when I publish the pics of my mushroom burger? I plan to use ground beef instead of chicken as I can’t get the latter here (ground chicken that is).

    Doddie

  14. Connie on April 24th, 2008 9:59 pm

pinaygourmand, the chicken meat was already ground when I bought it. The oyster mushrooms were hand chopped then I just mixed all the ingredients together.

    Doddie, of course! And thanks.

malakas naman magpataas ng uric acid levels ang mushrooms kaya if you have gouty arithritis , its not a good idea to eat them too.

my husband has gout, so less red meat and mushrooms are bawal too. but we still eat them. inom lang ng gamot kaagad.

    hello all.
tanong lang kung sino may alam:

may nutrients bang nakukuha sa mushroom?
anong MABUTI nagagawa neto sa katawan?

    kyuryus lang ako eh.

  23. beth on April 30th, 2008 8:59 am

    hi joey tosino!!!

mushrooms contain about 80-90 % water and are very low in calories (only 100 cal/oz).they have very little sodium and fat and 8-10 % of the dry weight is fiber.

hence, they are an ideal food for persons following a weight management program or a diet for hypertension.

    happy mushroom eating!!!!
