Chicken and potatoes in lemon-cream sauce

Go to page 1 2 »»

I cooked this chicken dish a couple of weeks ago. I had no intention of posting the recipe because I was saving it for the cookbook that I am writing. Oh, there, I announced it already. Anyway, the cookbook will contain unpublished recipes. My original plan was to include only original recipes, meaning, ones that I “invented”, in panic mode or otherwise. But I decided to stick with an all-Filipino theme. That said, this recipe will not be included in the cookbook since it’s hardly Filipino. As to when the cookbook will be published, I am hoping that will be before the end of the year.

chicken and potatoes in lemon-cream sauce

This chicken dish is similar to my earlier chicken, peas and mushrooms in sour cream. Instead of using commercial sour cream for the sauce, however, I used all-purpose cream to which I added the juice of one lemon. Ah, the flavor and the aroma was much, much better.

Hi, Connie! I live in Vancouver, Canada. What can I use in place of all purpose cream?

  2. Connie on May 17th, 2006 12:11 am

Pinky, I’m sure you have all-purpose cream there although it might be called something else… like single cream?

  3. Gina on May 17th, 2006 6:56 am

    Ohhh, and the cookbook!!!

Wow! How can your overseas fan/s get hold of the book??

    Cheers, Gina :)

  4. Connie on May 17th, 2006 7:56 am

We’ll see, Gina. I’m new to this publishing thing but I’m sure we’ll figure out something. :)

I love chicken and I really treasure chicken recipes. I’ve never heard nor tried this one, but I am sooo excited to try this later for dinner!!!! and the words “lemon cream” sound cheerful and perfect together. can’t wait!!!! im also very excited to get a copy of your cookbook. YOU ROCK!!!!

  6. Connie on May 17th, 2006 9:05 am

    LOL thank you, paupau. :)

  7. neri on May 17th, 2006 9:13 am

  8. aggie on May 17th, 2006 10:40 am

Pinky, it’s called whipping cream (heavy or light) here in North America. I remember when I first tried making fruit salad here and I couldn’t find “all purpose cream” in the dairy section. Whipping cream lang pala yun. ;-)

  10. Madie on May 17th, 2006 12:30 pm

Hi connie! I will definitely try this chicken recipe. Can i substitute calamansi instead of lemon. Thanks

  11. Connie on May 17th, 2006 1:31 pm

neri, so does my husband hehehehe

aggie, ayun pala! i’ll remember that next time i post a recipe with cream.

lemon, i read your comment in my other blog… ever thought of writing professionally? it’s something you can do at home… you can be with your baby. :)

Madie, yes, but I wouldn’t know how many kalamansi you’ll have to squeeze to get the equivalent of the juice of one lemon.

how do i start?I started blogging only lately, but my love for cooking and discovering new ways to cook pinoy fare began when I was a child and I kept on pestering my mom on why she did this, placed that, on certain dishes. by the way, i love the way you present your dishes. they really look great, i can almost taste them.also, it seems you also have a penchant for family outings, like me. 2 weeks ago, we went all over antipolo looking for the least-crowded resort. we were thrilled to discover aguas de azules, its near fiesta resort, in antipolo. We were just unlucky at that time, since the resort was booked exclusively for nestle phil. emp. Judging from our first view of the place, I would say the resort is clean and ideally private. Do check it out when you go off on one of your trips.

hi! pardon my ignorance, but what is dill? can i omit this? where can i buy it? thanks!

  15. Connie on May 17th, 2006 5:39 pm

cathy, your reaction as well as others’ are really inspiring. i’ll do my best not to disappoint. :)

lemon, is that a food blog you’ve got? i suggest you get a google adsense account.

it’s an herb, cynee. you can buy it in the salad vegetable section of most supermarkets. or you can go to market! market! and buy a live plant for PhP 35.00 and just put in where it gets a lot of sun. Voila, you have fresh dill everytime you need it.

  16. Chevee on May 17th, 2006 5:54 pm

Finally a cookbook! I hope it comes out in time for Christmas so I can give it to all my friends. I’m getting tired of sending them your URL hehehe. A compilation of your recipes here would be nice, too, though =)

  17. maricar on May 17th, 2006 8:17 pm

hi, connie! can’t wait for your upcoming cookbook, please…please let us know as soon as it’s out na. ha, keep at it!

  18. Pinky on May 18th, 2006 8:06 am

hi, no it’s not a food blog. it’s a blog about my day-to-day adventures/misadventures being a mom and mil. wife. thank you for the suggestions and i look forward to reading your blog daily. i live in rizal (cainta) area, and i can attest that we get less of the pollution than other metro mla. areas

  20. Connie on May 18th, 2006 11:10 am

Chevee, I thought about the compilation too. But would people buy the cookbook if the recipes are available online? Kasi, if a first book does not make money, a second one becomes improbable.

    I will, Maricar.

    No problem, Pinky.

    lemon, I e-mailed you.

  21. ria on May 18th, 2006 11:44 am

Yey! a cookbook from pinoycook.net. :) I will definitely buy one. ‘been a follower of your fantastic recipe’s Mrs. Connie. :)

  22. Chevee on May 18th, 2006 12:07 pm

Sassy, i know i would. why? because i don’t really want to print out your recipes. even if i had it bound or something, iba pa rin ang actual cookbook =) though you have a point, most people probably wouldn’t bother buying it if the recipes are available here for free =(

maybe you can release a compilation as a follow-up to the first cookbook? XD

  23. Connie on May 18th, 2006 12:17 pm

salamat, ria. so… including family members, siguro i have around 20 people willing to buy the cookbook when it comes out…??? LOL

Chevee, kasi a book is always better for ready reference…?? Maybe, parang personal picks…

  24. ria salcedo on May 18th, 2006 3:49 pm

connie, got some good news here ha! i’ll certainly buy that book, kindly email me the title when its out in the market, actually i always browse your site from time to time even during my office hours, its my form of relaxation from programming workloads, actually im at web development firm as of now!

you are really a blessing to mothers even to a young wife like with no kids yet!!! I know God will give it at proper time.

your site looks good too!!! i have my website also, but its more on web development, maybe you could help to gain clients, i know and believe you could.

  25. auee on May 18th, 2006 7:44 pm

Uy cookbook by the Sassy Lawyer.
    I’ll watch out for it…

  26. Connie on May 18th, 2006 10:06 pm

thanks, auee. i really need to spend less time in front of the computer and more time in the kitchen hehehehe

  27. april on May 18th, 2006 11:11 pm

    hi connie,

i agree w/ chevee, a compilation would be good, as well. i’d buy one, too and probably give it as gifts to friends. we always find basic recipes from the net but almost always buy a cookbook w/ those recipes.

i’m also overseas, i sure hope i can get a copy of a copilation and the one you’re working on.

    all the best!

  28. Glazy on May 19th, 2006 7:04 am

hi, connie! i just googled for “java rice” and i got this website! it’s sooooo cool!
i’m in l.a. but i’ll ask my mom to buy the book for me. and maybe some extra . . . it would make a great gift=)

    Glazy

  29. imawniumay on May 19th, 2006 4:16 pm

  31. Connie on May 19th, 2006 5:19 pm

Glazy and imawniumay, making it available online will be a primary consideration because more than half of my readers are based outside the Philippines. :)

  32. noemi on May 20th, 2006 1:17 pm

Wow a cookbook. I will buy! Did you consider asking Anvil Publishing to publish your cookbook. I just launched together with some other mothers a book on Loss of a child. Anvil was quite supportive and we had a successful launch just early this month. I am 100% sure your book will be a success.. I will be there at your book launch. baka you can come up with a cooking demo pa as bonus :)

  33. Connie on May 20th, 2006 5:16 pm

hi noemi. anvil has been recommended a number of times. right now, well… my husband has a cousin who’s a publisher so… you know, it kinda takes my mind off a lot of things, allows me to focus more on the cooking and the writing. if it doesn’t fall through though, i will try anvil. :)

  34. JMom on May 21st, 2006 12:39 am

A cookbook! about time, I say ;-) I’ll be in line to buy the first edition!

Well you know how we loved the first chicken w/peas and mushrooms recipe, so we’ll be sure to try this one too.

  35. Connie on May 21st, 2006 12:57 am

Thanks, JMom. :) Hope you enjoy this one even better than the chicken with peas and mushrooms.

  36. rhodora on May 21st, 2006 9:31 am

naku, connie! sayang, ngayon ko lang nabasa itong recipe mo! … i had to cook a chicken dish for a family day picnic yesterday… and since i had no idea of another way to cook it other than adobo and afritada, nilagyan ko na lang ng pinya! hahaha… anyway, i will certainly try this chicken and potatoes in lemon-cream sauce…. yummy! inggit ako sa ‘yo, paano ka nakaka-create ng mga sariling recipes? hehe… you’re indeed multi-gifted!

  37. Connie on May 21st, 2006 1:40 pm

paano nakaka-create… ummm kasi mabilis ako magsawa. same with my kids. :) besides, experimenting is fun especially when the result is a success. syempre pag hindi success, nakaka-depress din hehehe

  38. megastina on May 24th, 2006 10:24 am

Oh good, a cookbook! Finally! mega suggestion: sana it’ll have more recipes that are not so time consuming…mga 30-40 minute recipes for busy moms like me! :)

  39. Connie on May 24th, 2006 2:23 pm

Tina, ideally, a dish should be a kind of throw everything in a pan, leave, then come back when it’s cooked hehehe

  40. les on April 13th, 2007 12:56 pm

    hey connie,
regardless of the fact you’ve earned it a million time. i’m going to mention it once again.
    fantastic site. hands -down!
you’ve made me feel better about cooking non-repetitive recipes for quite a while now. thanks for that!
anyway, i know this is quite farfetched, but can i use beef broth instead of chicken broth? it’s just that i have a pack of beef broth i have yet used. or will the outcome end up tasting weird? since it is a chicken dish afterall..
and by the way, what do you mean by “a head of garlic” or “a head of onion”? is it similar to “a clove of garlic”?
    hope to hear from you!

  41. les on April 13th, 2007 12:58 pm

*heard it a million times, my bad. =)

  42. Connie on April 14th, 2007 2:43 am

    thank you, les.

re broth. I use whatever I have. Never had complaints before. :)

    A head a a whole whereas a clove is a segment.

  43. Elizabeth Tecson on July 11th, 2007 3:40 pm

thanks for having a blog like yours it’s a big help for me who’s still learning to cook. I’ll pray that you’ll always have time to write so that many could learn from you.

  44. reluctant cook on October 2nd, 2007 3:34 pm

i bought a kilo of lemons in Baguio some weeks ago and have been looking for ways to use it (other than dip it in iced or hot tea). Could i use the lemon peel as lemon zest as well? can’t seem to find lemon zest in the groceries in the alabang-las piñas area. thanks!
