Chicken and spinach stir fry

The original recipe uses slices of pork tenderloin. Found it in a magazine some 15 years ago. I used to make this dish with kangkong because spinach was rarely available in wet markets and not even always available in supermarkets. It was such a pleasant surprise finding “Baguio spinach” in Cherry Supermarket last weekend. So… we grow spinach locally now. Good!

This chicken and spinach stir fry is very, very, very easy to cook. Even a real novice at cooking can do this. The secret is in the marinade. You have to give the strips of chicken enough time to absorb the flavors in the marinade before cooking.

    Mmmm i love vege’s, so interesting to find spinach sa pinas! I think even vines can grow in Baguio and maybe one day can develop wine.:lol:
    You know what, the best tasting strawberry i’ve tasted is in Baguio. Here there is a variety that they cultivate just in water. Uncomparable sa Sungrown strawberries. yummm

    I can easily make this recipe, no problem when it comes to spinach. Here I substitute baby spinach (or romaine lettuce )for the kangkong in Sinigang. Kangkong can be bought at some big Chinese Supermarket but it will cost as much as buying the beef or bangus itself.
    My ulam for today is Chicken Tinola, with lots of sayote.

    Rose, kangkong doesn’t grow in LA? Kaya mahal? Kasi, kung imported, the price inevitable doubles, or triples.

    I tried this yesterday and it was such a hit, i really dont know how to cook although i know how to bake, before everytime i cook my family wouldnt eat :lol:, now every weekend i cook checking new recipe on your site before i go home (i work in the city and go home to the province on weekend) … i let my son judge .. if he likes it … then its ok ..( he is all i have and the only person thats matters to me basically i cook for him :wink: Thank u for your wonderful site .. it helped me a lot … and remember ur flavored yema balls … that was my christmas give aways and my officemate couldnt have enough of it

    I’ve tried this recipe few days ago… not exactly like your recipe but medyo hawig narin and my hubby loves it. salamat sa recipe. :smile:

    Mine was a lil’ chicken breast only and didn’t marinate it and I added some carrots too. :lol:
