Chocolate-kissed muesli cookies
Muesli (pronounced myoos-lee), a mixture of unrolled oats, dried fruit and nuts, is generally considered a high-fiber healthy breakfast cereal. If you add butter and sugar to muesli to make cookies, does it make the jump from health food to junk food? What if you reduce the recommended amount of sugar and butter, and add applesauce to make up for the reduced sweetness and liquid? Finally, what if you top the cookies with Hershey’s kisses? Junk food? Actually, the pleasure of eating the cookies was more satisfying than the answers to those questions.

I took a tried-and-tested oatmeal recipe (from my sister-in-law, Susan), reduced the amount of butter by one-fourth cup and the amount of sugar by another one-fourth cup, added applesauce, used less muesli than the amount of oatmeal required and increased the flour by half a cup. The addition of Hershey’s kisses was borne out of an inspired moment.
Makes 21 large chewy cookies. If you want crisp cookies, reduce the amount of applesauce.

Ingredients:
1 c. of butter
1/2 c. of Muscovado sugar
1/2 c. of white sugar
1 egg
3/4 c. of applesauce
2 c. of flour
2 tbsps. of baking powder
1/2 tsp. of salt
1/2 tsp. of ground cinnamon
1/4 tsp. of ground nutmeg
2-1/2 c. of muesli
21 Hershey’s kisses (plain or with almonds)
Preheat the oven to 375oF.
Combine the flour, baking powder, salt, cinnamon and nutmeg in a bowl.
Beat the butter and sugars until fluffy. Add the egg and applesauce. Mix well. Stir in the flour mixture and the muesli. Mix until blended.
Drop by heaping tablespoonfuls onto ungreased cookie sheets about two inches apart. Flatten the tops slightly and push a Hershey’s kiss into the center of each cookie just deep enough to make a shallow indentation.
Bake in a preheated 375oF oven for 13 to 15 minutes.
Transfer the cookies to cool in a wire rack.

Who says junk food? I’ll eat that whole tray in one setting …yum yum yum.
Majority rules. There are much more of good and healthy ingredients and less of not so good ones. So, I call that a healthy food.
