Ensaladang Pipino (Cucumber Salad)

Ingredients :

5 cucumbers

To make the dressing :

juice from 30 kalamansi (lemon or lime is okay)
6 tsps. of sugar
a pinch of salt
1/2 tsp. of cracked black pepper
1/2 c. of olive oil
2 tbsps. of chopped pimientoes
1 tbsp. of chopped parsley

Cooking procedure :

Peel the cucumbers. Cut into rings about 1/4 inch thick. Arrange in rows.

To make the dressing, place all the ingredients in a glass jar with a screw type cap. Shake a couple of times to dissolve the sugar and salt. Pour over the sliced cucumbers and chill well before serving.
