Fish fillet and vegetables in sour cream
Some cooked dishes just aren’t photogenic. This one, for instance. It just looks like a scramble of cream and veggies. But, as with many things, it isn’t a good idea to judge a book by its cover. After turning off the stove and I tasted the sauce to check if I needed to adjust the seasonings, my first impression was that I was eating melted cheese. Funny, really, because cheese was not among the ingredients of this dish. Then, I remembered how cheese is made — by fermenting milk. That should explain why the sauce of a dish made with sour cream tasted like melted cheese. It was lovely!

Ingredients :
500 g. of fish fillets (I used tangigue)
a quarter of a small squash
1 medium-sized carrot
1 small can of green peas (frozen sweet peas would be even better)
1 c. of cream
1 lemon
salt
pepper
1/4 c. of butter or margarine
1/2 tsp. of dried rosemary
Cut the fish fillets into 1-inch cubes. Place in a bowl. Season with salt and pepper.
Peel and cut the squash and carrot into 3/4-inch cubes.
Over medium heat, melt the butter in a frying pan. Add the carrot cubes and cook for a minute. Add the squash cubes and green peas, and cook for about 3 minutes, stirring often. Season lightly with salt and pepper.
Turn up the heat to high. Add the seasoned fish cubes. Cook for a minute or until no longer pink. The edges will brown slightly because the natural sugar in the vegetables are starting to caramelize at this point. Add the rosemary.
Pour in the cream. Stir well. Squeeze the lemon over the fish and vegetables in the drying pan. Stir a few times. Turn off the heat.

ms connie,
aside form tanigue, what other types of fish i can use or substitute for this dish?
By the way, the other night, i finally made some fish fillet spring rolls, i used sole, and my parents can’t stop talking about it! Everything worked so well with the mayo and fresh garlic and dill!
Thanks again!
dhay, any firm white fish — lapu-lapu, maya-maya, labahita, sole, talakitok…
i would try this one too, specially my mom is diabetic, so she’s into fish and vegies, they’re trying to stay away from meat as much as possible. Kaya lang its hard to cook at home where my husband likes meat, but my parents likes fish and vegies, often times, when they get home at night, they make something else for themselves. I want to try this dish and the mix vegie with sour cream too!
Oh did i mention that my husband liked the sole fish with dill as well!!
thank u so much!
naku, dhay, ang hirap naman nung multiple preferences… the hardest thing would be to cook one set of food for each family member. ngek.
hi ms. connie!
favorite po kasi ng 4yr old son ko…
thanks for sharing this great recipe…
gusto ko lang po sana magtanong how to make homemade SOUR CREAM DIP… i’ve been searching the net but cant find any…
thanks…
by the way ms. connie, ung mini leche flan recipe mo is always a hit!!!
i never thought making it was sooo easy…

thanks again ms. connie
beck, when we make onion rings, i’ll post a recipe for the dip. it’s my daughter who’s really great at making it.

so glad that you can enjoy leche flan in singapore.
they’re reminded of “fiestas” in pinas daw - kaka-miss!
biglang kumalam tyan ko sa onion rings… hehe!
thank’s again ms. connie!

i came across your site when i typed in “leche flan” sa yahoo search… BUTI na lang po i clicked the link directing to your site dahil kung hindi ay until now sumasakit pa rin ulo ko kakaisip ng meals na ihahain sa asawa at anak ko… lalo na po sa tulad ko na ngayon pa lang nagsisimulang magluto… ngayon lang po kasi sa bahay na lang ako and hindi na working… i worked for 5yrs as progmr sa pinas but when we got here at wala ng mga relatives na mag-aalaga sa baby, napilitan po ako mag-stop na sa work… minsan nga po (madalas actly) i feel guilty kapag hindi masarap ang luto ko kasi yun na lang po ang gagawin ko hindi ko pa magawa ng maayos…
