Chicken salad sandwich

There seems to be a lot of conflicting opinions as to whether toasted bread is better for controlling the rise of blood sugar. Some say that bread is bread and toasting it won’t trigger chemical changes in its composition.

Men’s Health makes a reference to a UK study that says otherwise. Let me quote:

“When participants ate bread that had been frozen, thawed and toasted, their blood sugar rose 39 per cent less than when they ate fresh slices. Both freezing and toasting worked on their own, reducing glycaemic response by at least 26 per cent each. It could be that these processes alter starch and prevent it from breaking down into sugar.”

Freezing then toasting, rather than toasting fresh bread, seems to be the key. Worth considering. After all, freezing bread also prolongs the bread’s shelf life.

    Freezing as in 100 degrees Centigrade? I’d like to try though we only have microwave oven here. No bread toasters, will it have the same results?

    Kotsengkuba, bread becomes chewy when heated in the microwave.

    When you said freezing, did you mean to put it in the freezer and not just simply refrigerate it?
