Pandan macaroons

We were in the supermarket the other night and discovered new products from Pillsbury–strawberry and pandan flavored pancakes. The box of the pandan flavored pancakes had a recipe for pandan macaroons using a mixture of pancake mix and dessicated coconut. I considered following the recipe to make pandan macaroons but finally decided against it. I was worried that the macaroons would turn out bread-like and that would be a disaster. So, I made my own recipe based on a macaroon recipe printed on the plastic bag of Coconut King dessicated coconut. Note that this recipe is different from my older macaroons recipe which uses sweetened condensed milk. This one instead uses coconut cream.

Again, I am not great at baking. But simple recipes like these, I can tweak and come up with something edible. :lol:

Actually, my pandan macaroons turned out great. Everyone manages little miracle from time to time.

    hi connie. :sad: sad ako kasi my pandan macaroon doesn’t look like the pic in this site. very soft pa rin kasi ang middle part, parang hindi naluto pero naubos rin kasi di rin kasi marunong magluto ang kumain :oops:
    actually i didn’t use the coco cream powder kasi wala akong makita dito so instead i used gata talaga.yummy naman talaga sya in fairness pero I’ll keep on trying para ma perfect ko like the way it looks in the pic.

    By the way, I’m from Cebu and really loves cooking.Kaso, ang cooking and medyo ilang pa sa kin though wala pa namang namamatay sa mga luto ko :grin:

    Thanks for this wonderful site and I’m going to start cooking na your recipes.

    Can i use coconut cream from the can?And what about the dessicated coconut can i subtitute the frozen grated coconut?Thanks.

    hi,, mga ilan magagawa mo nito kapag gumamit ako ng paper cups na 1″ diameter din,, 100 din? Saka same bawal ba ung food coloring na powder.. ang mahal kc ng liquid sa malls eh..

    Luz, frozen coconut is too watery.

    Kaye, am not familiar with powdered food color. Check the ingredients for healthy safety.
