Pesto and smoked salmon spaghetti

pesto and smoked salmon spaghettiYesterday’s lunch. About two hours after experimenting with my Pinoy Pesto, I thawed the few slices of smoked salmon I had left. Then, I boiled some spaghetti–just enough for one meal.

While the spaghetti was boiling, I tore the smoked salmon into small pieces.

When the spaghetti was done, I drained it and, without rinsing with cold water, I placed it in a bowl. I added 2 tablespoonfuls of my Pinoy Pesto and the smoked salmon and tossed them all together.

And that was it! It was the best lunch I’ve had by myself in weeks.

    This really does look satisfying. I’m going to have to try out smoked salmon and pesto in a dish - I’m sure those combined flavors are magic.

    They were just wonderful, Erin. Hope you enjoy the combination as much as I did. :)
    Ulaparaw, if I don’t consume the pesto in two weeks, I throw it out. I really don’t know that it isn’t safe after that but 2 weeks does not seem to be an arbitrary period to me.

    That pasta sounds fanastic. I made a spinach pesto the other day that was really simple to make, and delicious. I think the salmon would be a wonderful addition. Thanks for sharing.
