Shrimps, cabbage and bell pepper stir fry

Looks like I’m going to stop being a Shopwise regular. The Landmark opened at the TriNoma mall recently and the supermarket is a cook’s dream. We used to shop at Landmark in Makati but those were the days when I was still working in an office. For a stay-at-home mom, Makati is just too far away. The fact that the commercial center is a parking nightmare doesn’t make it any attractive either. But The Landmark at TriNoma… that’s manageable.

To be fair, Shopwise still has a better line of imported condiments. But the fresh produce at The Landmark is what makes shopping there such a thrill. Lots of fruits and vegetables neatly arranged and packaged and lots of seafood with at least four varieties of fish fillets that I so love to cook as stir fried dishes. I didn’t get a good look at the meat section last night because we still have lots of meat in the freezer but, next time, that’s going to be my target.

So, it was the trip to TriNoma last night that resulted in a gorgeous stir fry for my kids’ packed school lunch today. About 18 pieces of not-so-large shrimps, half a head of cabbage, two red bell peppers, an onion and some garlic and ginger and the stir fry was done in something like 10 minutes.

Ingredients :

18 medium-sized shrimps
1/2 head of cabbage
1 large white onion
4 cloves of garlic
2 red bell peppers
1/2 tsp. of grated ginger
4 tbsps. of cooking oil
salt
pepper
a drizzle of sesame seed oil

Cooking procedure :

Wash the shrimps. Cut off the heads and peel off the shells if they haven’t been cleaned yet.

Shred the cabbage. Crush, peel and finely chop the garlic. Peel and dice the onion. Core the bell pepper, remove the seeds and veins and cut into thin strips.

Heat the cooking oil in a frying pan or wok. Throw in the shrimps. Add the diced onion, grated ginger and chopped garlic. Cook, stirring, just until fragrant (about 15 seconds). Add the shredded cabbage and bell peppers. Season with a little salt and lots of freshly ground pepper. Cook for about a minute to a minute and a half, just long enough to cook the shrimps and NOT overcook the vegetables. Off the heat, drizzle with a little sesame seed oil and you’re done. :)

    Wow, this looks so good. I think I have cooked something like it before except I added some oyster sauce, tapos yung left over inihalo ko sa cooked “egg noodles” kaya para siyang nagiging pansit. Umm.. I think I will cook this dish sa weekend. Thanks again for the inspiration.

    Les, boneless bangus chunks will work if you toss them with the veggies AFTER everything is cooked already. Boneless bangus breaks up easily and won’t be able to take too much stirring.

    Ebba and Dhay, looks like you may have to add more than a little salt if you’re going to cook this. The kids complained that it was bland.

    I think a little oyster sauce would alleviate it’s bland taste.

    hello…i’m a newbie here…read an article in this month’s gh(nov07) about pinoy cook. i’m soo happy there’s a site like this. finally, i can read about food and stuff….great idea…i’ve also been to land mark trinoma. and the place rocks! i bought a pepper grinder (with peppers included)-brand is Carmencita. at buti na lang…here’s a tip i got: it’s better to buy whole peppercorns,nowadays na pala, kasi ground peppers are substituted with watermelon seeds (as extenders siguro).landmark trinoma nga lang has no siomai wrappers for sale when i was there…huhu…by the way, can i use canned tuna if i don’t have shrimps?thanks…

    rima, I saw the peppercorn melange too. Too bad I already bought McCormick at Clark (peppercorn melange link). I love Carmencita herbs in grinders. I have the Toscana, Provence and Zanzibar. :)
