Speedy’s burritos

Burritos — a Mexican food that consists of flour tortilla wrapped around a filling that can include beans, beef, vegetables or all of them. When we go to Taco Bell, we often choose the one with ground beef and potato filling. We’ve tried others (the pork barbecue is… well, just skip it) and we’ve always gone back to the one true and tested burrito that have never failed us. I suppose it was only a matter of time before one of us tried to reproduce it at home. My husband, Speedy, beat me to it.

Makes enough filling for 6 large burritos.

6 pcs. large flour tortillas
about 300 g. of ground beef
1/2 head of garlic, peeled and minced
2 onions, peeled and finely sliced
2 finger chilis, sliced
2 tomatoes, chopped
250 g. of potatoes, cut into half-inch cubes
salt
pepper
1 c. of cooking oil

In a wok or frying pan, heat the cooking oil until it starts to smoke. Fry the potato cubes until lightly browned. Drain on paper towels and set aside.

Pour off the cooking oil. In the trace of oil that remains, saute the garlic, chilis, onions and tomatoes until fragrant. Add the ground beef, breaking up any lumps. Season with salt and pepper. Cook until the beef is lightly browned.

Reheat the tortillas one by one in a skillet. As each tortilla is heated, transfer to a plate and place about two tablespoonfuls of fried potatoes on the center. Top with an equal amount, or more, of the ground beef. Fold the tortilla to wrap the filling and serve. Optionally, you may want to add a tablespoonful or so of sour cream before folding and wrapping the tortilla around the filling.

    Hi Connie!

    My husband also makes burritos in our family. He usually cooks the ground beef with taco seasoning, cumin and salt. Then the fillings for the burrito also include shredded lettuce, diced tomatoes, salsa, and heated refried beans. It’s heaven on a plate.

    Hope you can try that combo soon.

    It’s really a guy’s recipe, isn’t it? Carnivorous, straightforward and doesn’t require spoon, fork and knife to eat hehehe

    hi connie,

    i once had an entry very similar to that. (http://lararinnacooking.wordpress.com/2008/06/13/speedy-burrito/) it was named speedy burrito after speedy gonzales (the cartoon) and also because it really is quick to “assemble”. although chopping the veggies can be such a hassle.

    Way to save the environment, Speedy. No paper or plastics to throw away.
    Have you tried using white rice with black (or pinto) beans, instead of potatoes or refried beans? Add shredded lettuce, diced tomatoes and salsa (mild or spicy) sauce as Doddie mentioned above.

    Hi Ate Connie,
    Kuya Speedy seems to be cooking more these days.
    We eat burritos without the tortillas(because it’s made with lard around here). It’s called borrito bowls(from Chipotle’s), you can pile up lettuce and corn(from can) on top. Hubby fixes tacos for the family. Well, I do the chopping for the tomatoes, lettuce, onions and cilantro.

    Being in Texas (Houston) where the majorityof the immigrants are Mexicans, Burrito is so common, and in fact one of my american husband’s favorite. He orders one with spanish rice and its so big, 2 people can eat it. Burrito also became so famous among the Texans that alot of restaurant adopted other than the native taste thus coming up with TexMex dishes. There’s also restaurant’s name like Super Burrito, Burrito Giant..etc.

    Speedy, time to start your own restaurant. Burrito is one of the healthiest food - rice, beans, vegetables, natural “Speedy Salsa” sauce - and environmentally (paperless, plasticwaresless) friendly. With Connie’s “Burger de Pandesal” and other sweet goodies, it’s gonna be a winner.

    hi miss connie. i just finished cooking the burrito. ang sarap! i made the mistake of buying burger patties at the grocery. walang kalasa lasa. i should have made my own burger instead, like you said. anyway, i didn’t want to waste the beef patties so i decided to try your recipe for burrito. success! i’m so happy, can you tell hehe.

    this is the first time that i’m living on my own (and 6000 miles away from!) so food is really a big problem for me. no more mommy or househelp to cook my favorite dishes. my previous attempts have been a disaster, and that’s an understatement. i’m really thankful for your blog. the recipes are simple and healthy, perfect for an amateur like me who’s also trying to lose weight and eat right =) thank you again! my next “project” is your carbonara. wish me luck =)

    Been browsing your site for quite some time, cooking is also my passion (if i have time coz i work full time and a mother of two toddlers). Just want to ask if you have the recipe of the tortilla for the burritos? Want to try it (the burritos) but i doubt if there’s an available ready made tortilla here in our local groceries, (havent seen it). Thanks..

    Jinky, flour tortillas are available in many supermarkets. In different sizes too. It’s corn tortillas that you won’t find.
