Taisan from Edna’s Cakeland

I’m baking a strawberry cake today. But while I wait for the butter to soften and the eggs to warm to room temperature, let me share with you something absolutely delicious. It’s called taisan. But it isn’t just any taisan.
What is taisan? Think buttery chiffon cake, but small, and topped with butter, sugar and, sometimes, even grated cheese. I used to define taisan according to the Red Ribbon standard until I discovered Shoppersville’s (along Katipunan Road, across Ateneo) taisan years ago. It has been THE taisan for me since. Then, last Christmas, the mom of my older daughter’s best friend gave us a boxful of taisan. The label said it came from Edna’s Cakeland in Cabanatuan City, province of Nueva Ecija. I ate one and forgot about Shoppersville’s taisan.
What makes Edna’s Cakeland’s taisan different? They’re softer, the grain is finer and the taste is absolutely buttery. I don’t think the photo does them justice but there’s only so much that photos can show. Too bad Cabanatuan City is a long drive from Antipolo to make these luscious sweets a regular treat. Hmmm… what a good excuse to visit Cabanatuan City.

hi! i also love edna’s taisan - but here in the office we call it mamon. we get to taste this at christmas when our branch office head from san fernando loads his car with more than 50 boxes of edna’s taisan!!!
they also have good quality crinkles.
you are so right - - cabantuan is a long way from here….

Hi Connie! I’m proudly from Cabanatuan and I can’t argue with you, Edna’s Cakeland is pretty much a household name in my hometown because of their buttery, yummy pastries. If ever you get a chance to visit our province, you may want to hoard Edna’s famous cheese rolls, crinkles and their choco cupcakes too. But sometimes, at around 3pm pa lang, ubos na tinda nila! Hehehehe

Hi! You should also try the other treats from Cakeland. My roommate from college is from Cabanatuan and we always ask her to bring us revel bars, brazo de mercedes and blueberry cheesecake from Cakeland. They’re so good, we never fail to finish one log of brazo de mercedes in one sitting!

i definitely suggest Cakeland. you should also try their buko pie, even better than those from Laguna! lahat yata ng product nila napakasasarap. they should consider expanding their business outside Cabanatuan. they would surely be a household name.
i’m outside the country for 3 yrs now and one of the firsts in my list is to visit cakeland. hmm..

Cakeland is definitely great.. pag pumupunta kami ng nueva ecija, lagi kami pinapatikim ng sylvanas ng tita ko.. Cakeland ung nakalagay sa box.. and we just recently went there.. and we buy a 2 boxes of sylvanas.. 3 days lang parang kinuyog, npakasarap.. halos kami lang ng mom ko umubos.. nabitin kami.. kaya were planning to buy at least 5 to 8 boxes.. masarap na tindda nila.. mas mura pa.. compare to red ribbon.. everything there taste so yummy!!!
