Vegetable and Apple Salad

We have a thirthy-something year old friend who does not eat raw vegetables. He changed his attitude about vegetables salads after trying mine.

We were in the supermarket late yesterday afternoon buying foodstuff we’ll need for Sunday’s swimming party. Our younger girl, Alex, (well, youngest since we only have two kids, both girls) is turning 10 and we decided to give her a little party. I think my husband felt a little dizzy at the amount of meat and chicken we were buying. Still getting rid of the extra pounds that Christmas invariably brought, he suggested we have a vegetable salad for dinner. I said we could have salad but we would need something else to go with it. The kids eat raw vegetables but they wouldn’t consider a vegetable salad a complete meal. I said fried chicken would be good. So we bought the greens.

When we got home, our 11-year-old girl, Sam, announced that their two friends–kids of our friends–were coming over. We thought it was going to be an after dinner thing. Mike and Melissa, with their kids, arrived while I was still cooking dinner. They brought a tray of baked pasta and about a dozen pizzaron. They said another couple, Reny and Ellen, and their daughter–our family friends too–were also coming. Reny and Ellen brought tikoy. In short, what my husband thought was going to be a light dinner for him turned out to be a 5-course dinner. His attempts at dieting once more went pffffttt! It was an informal dinner. We were watching DVDs (Die Another Day and The Hunted) and each got his food and watched the movie while eating leisurely. The kids ate between bouts of play.

Vegetable and Apple Salad

Until last night, our friend Mike was no vegetable salad lover. He just wasn’t into raw vegetables. At his wife’s prodding, he tried my vegetable and apple salad. I don’t know how many servings he had but the last word was that his wife, Melissa, would be making the salad at home too. It’s the dressing, he said.

So, what’s the dressing made of? Kalamansi (native lemon) juice, white sugar, olive oil, pepper and chopped parsley.

    Is there a substitute for parsley that you can suggest? I dont think i’ll find it pretty easily here and I really want to add more fruits and vegetables to our diet

    You can just omit the parsley, Alexie.
